Felix brings experience from some of the UK's most celebrated kitchens, including 3 Michelin star Moor Hall, Trinity, Hide, and Marcus Wareing's restaurants. His time working closely with seasonal produce and foraged ingredients shaped a philosophy rooted in simplicity, sustainability, and respect for the land.
This ethos carries into Saltbush & Smoke, where his background informs a style of cooking inspired by Australian flavours and authentic barbecue traditions. Here, the focus remains on British, seasonal produce—creating refined, ingredient-led menus that follow the rhythm of the seasons.
Now, with the opening of Outpost Bakery in Eccleston, Felix brings this ethos into baking—using heritage grains, local dairy, and seasonal fruit to create simple, thoughtful products.
